Recipe 4:
Corned Beef Special

Savoury Corned Beef and Potato Pie
Ingredients

1 x 340g tin of corned beef
1 medium onion chopped
450g potatoes mashed or
120g mashed potato powder made up as directed

1 tablespoon cooking oil
1 tablespoon tomato puree
Worcester sauce to taste

grated cheese for topping (optional)
 

Method

 
  1. Using a non-stick pan and the oil gently fry the onion until soft but do not brown.
  2. Cube the corned beef and add to the pan, still warming gently, and mix in with the onion.
  3. Add the tomato puree and sauce to taste and mix thoroughly.
  4. Turn the mixture into a 1 litre ovenproof earthenware dish – smooth out and top with the mashed potato.
  5. Smooth the mashed potato and top with grated cheese depending on personal preference.
  6. Brown under a grill or in a hot oven.

Serves up to 4

     
Recipe 5:
Biscuits

Cookies
Ingredients

100g margarine
50g caster sugar
140g self-raising flour

Optional: chopped nuts, chocolate pieces, glacé cherries
 

Method

 
  1. Rub all the ingredients together until they are thoroughly mixed and form a dough.
  2. Sprinkle a little flour on a board.  Roll out the mixture on the board into a sausage shape.
  3. Divide into about 24 pieces.  Place the pieces on a greased baking tray and flatten each with a fork.
  4. Bake at  gas 4, 180oC for 10 minutes.
 
 
Recipe 6:
Bread Pudding

Ingredients

For 8 portions
250g of stale bread
75g of dried fruit
50g of dripping or margarine
50g of sugar
1 level tablespoon syrup
1 egg
1 level teaspoon mixed spice
1 level teaspoon ground ginger
½ level teaspoon bicarbonate of soda
3 tablespoons milk
 

Method

 
  1. Soak the bread in cold water for 30 minutes then  drain and squeeze well.
  2. Beat with a fork and remove any lumps.
  3. Add the melted fat, dry ingredients, syrup, egg.
  4. Dissolve the bicarbonate of soda in the milk and add to the mixture.
  5. Turn into a greased pie dish.
  6. Bake at gas 5, 190ºC on the third runner from the top of the oven for 1 hour.
